Best Banana Bread

I'm not sure where this original recipe came from, but I've adapted it to suit my taste. I love using brown sugar in baked goods whenever I need a little richer taste. This recipe is so moist and delicious and the perfect amount of bananas! My secret ingredient: sprinkling brown sugar/cinnamon on top adds the perfect crunch! Warning-husbands love this! :)



Ingredients:
3 or 4 ripe bananas (I use 4)
1/3 cup melted unsalted butter
1/2 cup white sugar
1/2 cup light brown sugar
1 teaspoon cinnamon
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 1/2 cups all purpose flour
nuts, optional (I prefer not to use if I'm giving as a gift to avoid allergies)

Secret crunchy topping:
2 tbsp brown sugar, set aside


Preheat oven to 350 F. Mix butter into mashed bananas in large mixing bowl. Mix in remaining sugar, cinnamon, egg, and vanilla. Sprinkle baking soda and salt and then mix in. Add flour last and mix. Pour mixture into a butter or greased 4x8 loaf pan. Sprinkle top with 1 Tbsp brown sugar. Bake for 30 minutes, then sprinkle remaining brown sugar on top, then bake for additional 30-35 minutes. Inserted knife or tooth pick should come out mostly clean, means done. Cool completely, then remove from pan and slice.
